30 ml Oil sunflower
200 gr Jam cherry
3 gr Cinnamon
20 gr Lard
Any thin pancakes are suitable for this dish. In our recipe – on whey. It leaves a pleasant sourness and goes well with cherries. Cherry flavor permeates the layers of the pancake cake, turning it a rich ruby color. The taste of pancakes baked with cherry jam is very tender.
With a whisk or at low speed of the mixer, mix the eggs, a pinch of salt, sugar and a fraction of ground cinnamon, which goes well not only with apples, pears, but also with cherries.
Pour in the entire portion of refined oil (any variety is suitable) and about 40 ml of whey at room temperature, beat again lightly, combining the liquid components.
Pour in small doses of wheat flour in / with and continue in a circular motion.
Gradually add all the flour and knead at first a thick, sticky and smooth dough.
And the last we pour the remaining whey, diluting the dense dough to a liquid consistency. If flour is poured into the full volume of the liquid, it is more difficult to achieve uniformity and remove all clots and lumps. Thick dough is easily diluted with both milk and whey. We bake pancakes in a hot and greased frying pan (dry with a non-stick coating is also suitable).
Having finished with the roast, we generously coat each thin pancake with fragrant cherry jam - we fold it into triangles.
Lay pancakes with filling in a circle in a form. Pre-lubricate the walls and bottom of the container with oil, then cover with ground breadcrumbs. Each layer of four pancakes is also poured with cherry jam.
We finish with the assembly, scatter whole cherries on top of the workpiece, a little sugar and / or crackers - put for 15-20 minutes in an oven preheated to 200 degrees.
