Mexican mole sauce with chicken and pumpkin is a delicious, colorful dish. It manages to combine spicy, spicy and sweet flavors. At the first acquaintance with this stew, it is impossible to determine the presence of dark chocolate in the composition. And this unexpected ingredient is really there. And together with canned tomatoes and dry chili peppers, it forms an indispensable basis. According to Mexican traditions, these products remain mandatory. But with the rest you can experiment. We recommend that all spices are pre-fried in a pan. This will reveal subtle aromas and tastes of spices. To increase the spiciness of the mole sauce, you can increase the amount of chili pepper. But this should be done carefully, its taste is not revealed immediately. The longer the dish cooks, the more spicy it becomes. Heat 10 ml vegetable oil in a deep frying pan. On high heat for five minutes, fry the chicken breast, cut into small pieces.
Transfer the cooked meat to a plate.
Pour the remaining oil into the pan, sauté finely chopped onion in it until light golden brown.
Add chopped garlic and spices to the pan. Mix everything and fry for one minute.
Add bell pepper and tomato juice, beans, pumpkin puree, fried meat and chocolate pieces to the onion and garlic.
Bring the mixture to a boil. Cook it over low heat for 20 minutes. We cut the pumpkin into a small cube with a side of no more than 2 cm. We transfer the prepared pieces to the pan with the rest of the products.
We mix all the components together. Simmer them covered for 20-30 minutes. Add hot chicken broth or fresh water as needed. Adjust the density of the dish according to your preferences.
