Mexican-style eggs with vegetables is a spicy appetizing dish baked in soft corn tortillas. The widely known superfood is served in all restaurants and eateries in Mexico. It is almost as popular as Italian pizza. A traditional breakfast of eggs and tortillas, spicy tomato sauce can be easily prepared in your own kitchen. Cooking the vegetable component of the dish. In a frying pan with hot vegetable oil, fry the finely chopped onion and garlic. Add seasonings, mix.
Add bell peppers with tomatoes, chili peppers, beans and olive rings to the fried onions. We heat each product in a pan for about two minutes. The spiciness of the dish can be adjusted to your liking. It should be remembered that prolonged heat treatment of chili peppers significantly enhances its burning properties.
Place the corn tortillas in a non-stick baking dish. On the sides we place their halves, in the center - the whole. If we use Armenian lavash, then we cut out circles with a diameter of 20 cm from it. As an improvised pattern, we use a lid from a pan or an inverted portion plate.
Fill the form with vegetable mixture.
Using a spoon, form three small cells on the surface of the vegetables. We fill them with eggs. We try to keep the integrity of the yolks.
