The main feature of Mexican cuisine is the variety of products and their harmonious combination with each other. We are preparing a dish rich in composition – Mexican chicken liver with beans and vegetables. Here, vegetable and animal protein, a large amount of vitamins and minerals. The presence of healthy spices and herbs turns spicy chicken liver in a pan with vegetables into a gourmet dish. No garnish is required for this nutritious delicacy. One standard serving can instantly eliminate the feeling of hunger. And also provide the necessary amount of energy for the whole working day. Heat 20 ml of oil in a frying pan. Fry finely chopped onion in it.
We rub the carrots on a coarse grater. Add it to the fried onion. Simmer the vegetables for about three minutes.
We spread the Bulgarian pepper, cut into thin strips, into the pan. Fry it with carrots and onions for two to three minutes.
Add tomato paste.
Pour in 300 ml of hot water. Mix everything, cover with a lid and simmer for 10 minutes.
Roll large pieces of liver on all sides in flour. We transfer them to a plate. Remove excess flour.
Heat the remaining oil in a second frying pan. Fry the liver for five minutes on both sides. Add salt, pepper and Provence herbs.
Since chicken liver with canned beans, put it together with stewed vegetables in a pan to the liver.
Mix all ingredients together, add bay leaf. Bring the contents of the pan to a boil and simmer covered for 5-10 minutes. When serving, sprinkle the chicken liver with vegetables with chopped herbs. If desired, we supplement it with a small amount of pickled cucumbers, olives, black olives or lemon slices.
