Georgian pastries are known because of the popular cakes, the main ingredient of which is cheese. The classic khachapuri recipe uses real Caucasian cheeses: Suluguni, Adygei or Imereti. Megrelian khachapuri is a flatbread on a soft yeast dough. Its cheese filling is both inside and on the cake on top. Let’s cook a delicious recipe with a photo of Megrelian khachapuri at home!
Let's start preparing the Megrelian khachapuri recipe, first of all we will prepare the base. Sift half of the flour into a deep bowl. Add dry yeast, sugar and salt, then mix.
We heat the water to a warm state, and dissolve the butter in a water bath or in the microwave. In a container with flour, add warm water and dissolved oil. Using a whisk, mix flour with liquid ingredients, achieving a homogeneous mass. At the end, add vegetable oil and mix thoroughly again.
Sprinkling flour in portions, we proceed to manual kneading of the dough. The quantity you need will depend on the quality of your flour. The amount of flour may vary slightly from that indicated in the recipe. As soon as the dough stops sticking to your hands, then enough flour. We collect the dough for Georgian khachapuri in Megrelian style into a ball and leave it warm under a towel for 1 hour.
Grind the cheese through a coarse grater, set aside 4 tablespoons of grated cheese for decoration. We put sour cream to the bulk of the cheese and mix the filling. Sour cream will add juiciness to the filling and add plasticity, which is necessary for the formation of khachapuri. If you chose lightly salted cheese, then be sure to try the filling with salt.
Divide the risen dough into 4 equal pieces. We roll each of the pieces into a ball and leave it under a towel for 10-15 minutes.
Sprinkle the dough balls with flour and roll each one into a thin layer with a diameter of 20-25 cm. Put a ball of filling weighing about 80-100 g in the center of the circle.
We collect the edges of the cake from above and pinch in the center, squeezing the air out of the resulting bag. Excess dough must be cut off.
Turning the bag upside down, roll it into a thin cake. In its center you need to make a small hole necessary for the release of steam.
We transfer the cake to a sheet of parchment, then grease the surface with a beaten egg and sprinkle with cheese. We shift khachapuri on parchment onto a hot baking sheet and send it to an oven preheated to 220 °. Watching the degree of blush on the surface of the cake, bake it for 15-18 minutes.
