A rare holiday is complete without a favorite herring “under a fur coat”. This traditional salad has not only popular love, but also an interesting history. It is believed that the salad appeared in 1918 in the catering menu of the former merchant Bogomilov. Opponents of this legend say that herring under a fur coat appeared in Europe. There are many similar dishes from simple and budget products. Today “Herring under a fur coat” is our favorite salad, which we will cook today!
Herring (you can take the finished herring fillet in pieces) cut into loin pieces. To do this, remove the head and entrails, washing the abdomen, remove all large spinal and small bones. Do not be too lazy to process the fillets especially carefully, because it is so nice to eat this salad without being distracted by “minor troubles”.
Herring fillet is cut - you can cut it into small cubes. At the same time, you can remove all the bones that were not noticed during the initial processing of the herring.
Boil potatoes, carrots and beets in separate pans in their skins. Try to keep the same proportions of boiled vegetables in the total weight of the salad. It is advisable to boil the vegetables before you start cutting the herring - during this time they will have time to cool down and it will be convenient for you to peel and chop the vegetables into a salad.
Prepare the onion: cut into very thin half rings or a small cube. If your onion is too bitter, it is better to pour boiling water over it for 10 minutes, otherwise its taste will “kill” all the other ingredients. All vegetables have cooled down, now they can be peeled from the top skin-peel and grated on a fine grater. Grate the apple on a coarse grater and sprinkle with lemon so that it does not get a dark color.
When all the salad products are ready, we proceed to the formation of the salad. You can make it in a common plate or in a herring pot, but we suggest making it in portions. This is not as difficult as you think, but your guests will be happy to receive their own portion of the Herring under a Fur Coat salad, which will look aesthetically pleasing and very appetizing. Instead of a culinary ring, we will use foil - roll it into a strip, and then make a circle and fasten it with a paper clip on top. Put potatoes on the bottom of the ring, grease with mayonnaise.
On potatoes - put herring with onions, grease again with mayonnaise.
Then a layer of grated apples.
The next layer is carrots and mayonnaise.
The last layer is boiled grated beets. In the course of the process, lightly press all layers with a spoon. Transfer all servings to a cold place and let the salad brew for 1-2 hours.
Before serving, remove the foil rings and decorate the salad as desired - with green onion rings, fresh herbs, olives or lemon.
