Appetizing French pancakes “Crepe Suzette” are a favorite dish of the French, which, as a rule, are served for breakfast. This original delicacy was invented two centuries ago by the chef of a restaurant to treat a famous actress. She was his lover. The girl liked the interesting dessert. And she allowed me to call him by her name. The distinctive feature of French pancakes Suzette is the caramel-orange sauce. Before serving, thin products are heated in an aromatic liquid. Thanks to this, they acquire a delicate citrus taste. And very soft texture.
Let's prepare the dough for French Crepe pancakes - pour a tablespoon of sugar and salt into a deep container, beat in an egg. Whisk the ingredients together.
Pour in warm milk, add soda. Mix. Add sifted flour. Bring the contents of the container until smooth.
Melt half the quantity of butter in the microwave. Bring the water to a boil. Add liquid oil and boiling water to the dough. Mix everything well. Leave the resulting dough on the table for 20 minutes.
We bake pancakes. Grease a hot non-stick frying pan with a thin layer of vegetable oil. We use a silicone brush for this. Pour in half a ladle of dough. Using light rocking movements, distribute it along the bottom of the pan.
Fry the pancakes on both sides until lightly browned. Each item takes about four minutes to prepare. Place the finished pancakes on a flat wide plate and cover with a pan lid. Thanks to the steam, the edges of the products will become soft and elastic. Fold the finished pancakes into triangles and cover.
Prepare the sauce. Remove the zest from the orange peel. Squeeze the juice from the pulp. We filter it through a sieve.
Pour the remaining sugar into a dry non-stick frying pan. With constant stirring, simmer it over low heat until it has a caramel color.
As soon as all the sugar grains disappear, add the second half of the butter. Mix. Heat the resulting mass for two minutes.
Add orange juice and zest. Mix the contents of the pan so that all the sugar lumps dissolve. Cook the sauce for three minutes and cool slightly.
Place pancakes in the pan with the sauce. Warm them until warm, transfer them to a serving dish and serve immediately. Our French pancake recipe is ready!
