Fast ciabatta without kneading dough is the national Italian bread. This is a fragrant yeast product with a crispy crust and a porous center. Our ciabatta dough is prepared without kneading. Preparing the dough is very simple – no need to waste time and effort. Let’s make a simple ciabatta recipe at home!
Since our ciabatta is yeast, mix cold water with yeast, salt and vegetable oil.
Pour in half of the flour.
Using a hand whisk, we combine all the products together.
Add the second part of the flour. Mix everything until smooth. Cover the dough with cling film. We leave it on the desktop for 12 hours. As soon as the dough begins to fall slightly, proceed to the formation of products.
Sprinkle a kitchen towel with plenty of flour.
Use a silicone spatula to spread the risen dough.
We form an envelope from the dough. First, pull the side edges to the center. We periodically dip our fingers into the flour.
Then fold the dough in half. We pinch the edges.
Fold the dough again. We turn to the center of the side. Then we connect the other opposite sides and pinch. We generously cover the formed product with flour, cover with the free edges of the towel and leave it on the desktop for 1 hour.
Divide the risen dough into two parts with a kitchen scraper.
We cut two pieces of parchment for each product. Place the paper rectangle very close to the ciabatta. Turn the dough over onto the parchment so that the bottom of the product is on top. Flip the second ciabatta in the same way. Preheat the oven to 250˚C. At this time, on the third level there should already be a baking sheet for baking bread, and on the lowest level - a baking sheet for boiling water. As soon as the oven reaches the required temperature, transfer the sheets of parchment with the products to the upper hot baking sheet, and pour a glass of boiling water into the lower baking sheet. Bake ciabatta with steam for 20 minutes. Then we take out the baking sheet with water and leave the products in the oven for another 20 minutes. Cool the finished bread on a wire rack.
