Housewives have been baking Easter cakes for a long time. The recipes were simple, modest and uncomplicated. But over time, such baked goods became richer and more varied. The Easter cakes became very rich, not like bread. For the holiday, bake homemade and delicious Easter cake with raisins. This treat will decorate your table and delight your guests. For the recipe, in addition to flour, you will need eggs, butter, milk and sugar. The recipe for Easter cake with raisins is soft, tender, with a creamy taste. Don’t forget to add plenty of raisins – kids just love them!
First prepare the dough for the classic Easter cake with raisins. To do this, pour warm, only slightly warmed milk into a deep bowl. Pour dry yeast in there - check the expiration date, the yeast must be fresh.
Pour 15-20 g of sugar into the dough so that the yeast activates faster in the sweet environment.
Also add a couple of tablespoons of wheat flour from the total amount. Stir the dough and leave under a towel for 15 minutes.
The dough will become fluffy and a cap will form - this means the yeast has come to life and you can prepare the dough.
Prepare the sweet part of the dough. To do this, beat 1 chicken egg and 1 yolk into a container. Use the remaining white for glaze. Add all the sugar.
Whisk the sugar-egg mixture, then pour in the melted and cooled butter. Stir until smooth.
Add turmeric and stir – this spice will give the baked goods a bright, appetizing look. The sweet part of the dough is ready.
Pour the baking mixture into the fluffy dough and stir all the ingredients.
Then start gradually adding sifted wheat flour.
After pouring half a portion of flour, add washed and completely dried raisins to the dough.
Continue adding the remaining flour while folding the raisins into the mixture.
Knead soft dough and roll it into a ball. It will be slightly sticky, but do not add more flour or the mixture will be heavy.
Leave the dough to rise in a warm, draft-free place, covered with a towel. After 45-50 minutes it will grow 3 times and become very lush.
Grease your hands with vegetable oil and knead the fluffy dough, then divide it into medium balls and place in molds. Let it sit in the pans for 15 minutes and rise slightly.
Preheat the oven, then place the molds with dough there and bake Easter cakes with raisins for 35 minutes at 170-180°C. The cakes will become fluffy, rosy and airy. Remove the finished cake from the oven and let it cool completely.
While it cools, you have time to prepare the glaze. Beat the cooled egg white with sugar using a mixer. Beat for 4-5 minutes to thicken the frosting. You can replace sugar with powdered sugar.
