Cottage cheese-pumpkin casserole with orange zest is an appetizing and healthy homemade cake. It retains its excellent qualities even when cold. It takes a minimum of time and effort to prepare this moderately sweet dish. The original dessert looks beautiful in the context. Bright pumpkin puree and tender curd soufflé harmonize perfectly with each other. Grated orange zest adds a refreshing note to this unusual delicacy. Place the pumpkin pieces in a heat-resistant container of a suitable size. Cover the form with foil. Bake the pumpkin in an oven preheated to 200˚C for 35 minutes. If the mold does not have a non-stick coating, grease it with a very thin layer of vegetable oil. After the specified time, remove the foil from the container. Bake the pumpkin, uncovered, for another 15 minutes. In the presence of residual moisture, we throw the finished product into a colander or sieve.
We prepare curd mass. Using an immersion blender, we combine cottage cheese, sugar, eggs, orange zest, vanillin and starch.
The resulting mixture should have the consistency of thick sour cream.
Puree the cooled pumpkin pieces with an immersion blender.
To the resulting mass, add sugar, eggs, starch and vanillin. We combine all the components. Important! The next step is to adjust the density of the pumpkin and curd mixture. Both masses must be of the same consistency. The curd component of the casserole can be diluted with a small amount of sour cream or milk, and the pumpkin component can be thickened with flour or starch. The main condition is that the texture of each mixture should resemble thick sour cream.
We cook cottage cheese - pumpkin casserole in the oven. We line the detachable form with siliconized parchment, put a tablespoon of pumpkin mass in the center of the container.
Place the same amount of cottage cheese puree on top.
Continue pouring a tablespoon of each mixture into the center of the mold. We follow the sequence.
With smooth movements, we move the form along the working surface so that the curd-pumpkin puree is evenly distributed inside the container. Preheat the oven to 200˚C. Bake the dish for 45 minutes. Then turn off the oven, open the door slightly, but do not remove the casserole. Leave it in the open oven for 15-20 minutes. Important! We keep the finished dish in shape until it cools completely, and then put it in the refrigerator for two hours so that it is slightly compacted and stabilized.
