Delicious chocolate pancakes with berry sauce according to this simple recipe are incredibly soft and airy. Berry sauce perfectly sets off the taste of chocolate, making the dish even tastier and more aromatic.
Sift wheat flour, high-quality cocoa powder and baking powder into a deep dry bowl. Stir the dry mixture with a whisk so that the flour is well combined with cocoa.
Pour sugar into a deep bowl, beat one chicken egg. Add a pinch of fine salt and vanilla and beat the ingredients with a whisk, achieving a uniform thick texture.
When the sugar is almost dissolved, pour milk at room temperature into the egg mixture. Whisk the ingredients together again to combine.
Now, in several steps, add the dry mixture of flour and cocoa powder to the dough. After adding part of the mixture, mix everything thoroughly to avoid the appearance of lumps.
Thus, we introduce all the flour with cocoa. The dough should be thick and uniform.
Melt the butter on the stovetop or in the microwave. You don't need to boil it. As soon as it melts, immediately turn off the fire. Allow the butter to cool slightly so that the egg in the dough does not curl from the heat. Then pour it into the chocolate pancake batter.
Stir so that the oil is evenly distributed in the dough. It turns out uniform and glossy.
Pour a little dough into a dry non-stick frying pan, forming a round product. Pancakes should be slightly larger than pancakes. When a lot of bubbles appear on the surface of the pancake, carefully turn the product over to the other side, prying it with a spatula. Fry it for 30-60 seconds and transfer to a plate. Thus, we bake all the products.
Now let's prepare the berry sauce. Melt the remaining butter in the pan. Add granulated sugar to it and heat the mixture for two minutes so that the sugar acquires a golden hue.
Then add pre-thawed berries to the pan. It can be strawberries, blueberries, red or black currants. Warm everything together for 2 minutes, constantly stirring the sauce with a spatula, and remove from heat.
Place a stack of chocolate pancakes on a plate, pour berry sauce and garnish with mint leaves. Dessert will be served with tea or coffee.
