Tender chicken breast meatballs with tomato sauce can be served as an independent dish or supplemented with various side dishes. The dish turns out hearty and very fragrant thanks to spices and fresh herbs. Cooking these delicious meatballs is very simple and fast enough, especially if you prepare the minced meat and rice in advance. Products can be frozen, and then fried and stewed in sauce.
Wash the chicken breast under running water. Using a knife, remove the skin from it, then cut the fillet from the bone (diet broth can be prepared from the chicken carcass). We cut the pulp into pieces so that it is more convenient to grind it in the future. The fillet can be twisted into minced meat in a meat grinder or killed in a blender bowl. To make the meatballs juicy, add the onion cut into slices to the minced meat.
Rice wash and fill with cold water. Boil it until half cooked and put it on a sieve. For meatballs, it is better to use round-grain rice so that the products keep their shape better and do not fall apart during frying. Combine minced chicken with onions and cooled boiled rice in a deep bowl.
Salt the ingredients, add chicken spices, paprika and a mixture of ground peppers.
Mix the minced meat for meatballs until smooth. Optionally, at this stage, you can drive one chicken egg into the mixture.
Wetting our hands in cool water, we will form 16 round meatballs of medium thickness. We bread each product in wheat flour to achieve a beautiful golden crust on meatballs.
When all the preparations are done, heat the vegetable oil in a frying pan. Put the meatballs in the oil and fry them until a delicious crust on both sides.
Put the fried meatballs in a dry pan or stewpan.
Cut the remaining onion into cubes. Finely chop or grate the carrot.
Fry the vegetables until soft in vegetable oil.
Then add tomato paste to them.
Pour hot water into the resulting mixture, salt the ingredients and mix.
Pour meatballs with tomato sauce with sautéed vegetables. Add bay leaf, fresh parsley and peppercorns to the sauce for flavor. Cover the pot and put it on fire. We will simmer chicken meatballs for 15 minutes.
Chicken meatballs will be served hot. Mashed potatoes or pasta are perfect as a side dish.
