Biscuit roll with berry-cheese cream – moderately sweet airy delicacy with a slightly sour note. An appetizing and delicious recipe for biscuit roll with berry cream is quick and easy to prepare. Biscuit dough rolls easily and does not break. And the cream, due to the presence of curd cheese, turns out to be quite thick and stable. The proposed recipe uses blackcurrant jam. Cooking biscuit. Proteins and yolks are placed in separate containers.
Salt the whites, beat.
When foam appears on the surface of the protein mass, add vanillin, and then add sugar one tablespoon at a time. Whisk the mixture thoroughly. The whole process takes about 10 minutes. The finished mass should be dense and glossy.
We introduce one yolk. At this stage, do not beat the mixture for a long time. A simple mixing is sufficient.
We add flour. We pour it in three doses. Using a silicone spatula, combine the flour with the egg-sugar mixture. We act quickly.
Add water to the biscuit mass. We mix. Water makes the dough more moist and manageable after baking.
We turn on the oven. Heating temperature - 220˚C. Line a baking sheet with siliconized parchment. Pour batter onto baking paper. We distribute it over the entire surface.
We bake a biscuit for no more than 12 minutes. The degree of readiness of the cake is determined by its golden color and elasticity when pressed.
Important! The biscuit should not be overdried. We transfer the finished cake to the table. We separate the parchment from all its sides. Cover the biscuit with a towel. We stand it for 2 hours on the working surface.
After the specified time, cover the biscuit with a sheet of baking paper and turn it over.
Remove the parchment from the bottom of the product.
We spread the jam. We distribute it.
We are preparing a cream of curd cheese for a biscuit roll. Combine oil with powder. We beat. Add cheese in 2-3 batches. We bring the mass to homogeneity.
Set aside a little cream to decorate the finished dish. Distribute the rest of the cream cheese mass over the jam.
We roll the roll. We help ourselves with the paper on which it is located. We are trying to form a dense product. We wrap the roll in paper as shown in the photo. We send the dish to the refrigerator for at least two hours.
Remove the parchment from the chilled product. We cut off the sides.
